Carmel Frosting

Ingredients

½ Cup Butter

1 Cup firmly packed Dark Brown Sugar

1/3 Cup Milk

2 to 3 Cups Powdered Sugar

In a sauce pan melt butter, brown sugar and milk on medium heat, stirring occasionally. Bring to a full rolling boil. Take of the heat cool to room temperature. (To cool quicker remove from sauce pan put in the bowl that you are going to mix the powdered sugar in.)

When it is room temperature mix in powdered sugar to desired thickness ***** (if it is to warm the powered sugar will just melt and the frosting will not set) ******

I think this would make a good drizzle with less powdered sugar

Is excellent with Betty Crocker Butter Pecan cake mix

Colleen's Chocolate Chip Cookies

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup (2 sticks)melted unsalted butter
  • 3/4 cup granulated sugar
  • 3/4 cup packed dark brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs ( room temp)
  • 2 cups (12-oz. pkg.) semi sweet chocolate chips
  • 1 cup chopped nuts ( chopped fine using chopper)

PREHEAT oven to 375° F.

COMBINE flour, baking soda and salt in small bowl.

Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy.

Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts mixing by hand.

Drop by rounded tablespoon onto ungreased baking sheets. Flatten with a fork dipped I water to prevent sticking.

BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely
.

Makes 4 dozen

Tiger Cookies

1 3/4 Cup Flour

½ teaspoon Baking Soda

½ Teaspoon Salt

1 Cup Butter

1 Cup Sugar

2 Eggs

1Teaspoon Vanilla

2 Cups Frosted flakes (crushed) I tried this with a Cherry Almond Crunch cereal it was umm umm good

1 Cup Chocolate Chips

Mix all ingredients then

Bake at 350 for 12 to 15 min until golden brown

Makes a small batch

Open Stir-fry Burritos



Cut veggies the size you want. Keep zucchini separate from the other veggies as they cook really fast.
Cook the seasoned meat you want to use.
Then cook
Onions- will change color when done
Bell peppers
Cauliflower
Broccoli
Carrots-cut small
Cabbage
Use the chili oil to stir fry the veggies. When almost done add the cooked meat and the zucchini. Cook for just a minute or so.
Put in a tortilla and wrap burrito
You could add sour cream, cheese, lettuce, tomatoes, and salsa

Allergy free Pineapple Upsidedown Cake



¼ Cup unsalted butter
2/3 Cup Brown Sugar
Slices of Pineapple in juice
½ Teaspoon Zanthum gum
1 Cup raw sugar
1/3 Cup Applesauce
1 ½ Teaspoon Baking Powder
½ Teaspoon Salt
¾ Cup So Coconut milk
1 Egg
1 1/3 Cup Rice flour mix
Marchino Cherry's (opt. Only use if not allergic)


Sift Dry ingredients (except the raw sugar)
1. 1 Heat oven to 350°F. In 9-inch square pan, melt butter in oven. Sprinkle brown sugar evenly over melted butter. Arrange pineapple slices over brown sugar. Place cherry in center of each pineapple slice.
2. 2 In medium bowl, beat remaining ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 3 minutes, scraping bowl occasionally. Pour batter over pineapple and cherries.
3. 3 Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. Immediately place heatproof serving plate upside down over pan; turn plate and pan over. Leave pan over cake a few minutes so brown sugar mixture can drizzle over cake; remove pan. Serve warm. Store cake loosely covered.


Basic Buttercream Frosting

 Ingredients

  • 3 cups confectioners' sugar
  • 1 cup butter
  • 1 teaspoon vanilla extract
  • 1 to 2 tablespoons whipping cream

 

Directions

In a standing mixer fitted with a whisk, mix together sugar and butter. Mix on low speed until well blended and then increase speed to medium and beat for another 3 minutes.

Add vanilla and cream and continue to beat on medium speed for 1 minute more, adding more cream if needed for spreading consistency.

Note: If using in a piping bag, be aware that this icing melts easily and the heat from your hands can let this occur. Also, be cautious to not set desserts with this frosting outside in the heat of the sun. 

Basic Cream Cheese Frosting

This is our basic Cream Cheese Frosting recipe that we use for most recipes.

Ingredients
3/4 Cup of Butter, softened
6 oz Cream Cheese, softened
1 Tsp Vanilla extract
3 Cups Confectioners Sugar


Directions
1. In a mixing bowl whip Cream Cheese until light and fluffy.
2. Add Butter. Beat well.
3. Add Vanilla. Gradually beat in Sugar.

Use immediately or store in fridge
